An unique solution for bakers from a distant country

In May 2017, the association of Czech producers J4, MOPOS and TOPOS put into operation a new line for baking free set wheat bread at the company Talkh Chikher in Ulan Bator, Mongolia. This comprehensive line – is already the seventh in a row – and it indicatives not only of the customer's satisfaction with our technical solutions and the high class of equipment supplied, but also of its high evaluation of the quality of finished bakery products produced on our equipment.

This complex line was developed and implemented by us taking into account the very limited spatial capabilities of the customer's enterprise and the requirements of compliance with the technological process. The basis of the line was unique designed proofing system and a double-deck electric tunnel oven. The line is designed for the production of round bread - 1900 pieces per hour. The delivery includes the following parts: preparation of dough (TOPOS), molding and proofing (MOPOS) and baking area (J4).

The pendular proofing system, type KP 2.5.180 developed by MOPOS, specially for this project, meets several specific requirements at once: maximum space saving and planting of products on a free set of double-deck tunnel electric oven. Proof is equipped with modern PUR facing panels. Such a design solution provides uniform medium with the desired temperature and humidity in the proofing system. Control is carried out by means of a computer and an automatic temperature and humidity control system; two separate tipping zones are provided for the lower and upper tiers.

Uneasy technical requirements of the customer became possible to observe due to the long-term specialization of MOPOS in the field of production of proofing equipment for bread and small-baked products.

After proofing, the bread moves directly to the mesh belt of the upper and lower tier of the oven PPP 2,5 68.811-E manufactured by J4. Due to fast and at the same time careful movement the bread volume is maintained. Both belts of the oven move in the same direction, i.e. we are talking about a straight-flow tier oven. The oven is heated by electricity: in total, the furnace has six zones - three zones in the upper and three zones in the lower tier. The temperature of each zone of the furnace is provided by means of separate PID-regulators. Thus, it is possible to set the desired temperature on each regulator, which will take care of its achievement using pulse width modulation. For the best possible shine of the product, in accordance with the habits of local consumers, the oven at the infeed and outfeed is equipped with moistening.

Long-standing very good business and personal relations with our Mongolian partners and interest in further development of production was also confirmed by the recent visit of Mongolian bakers to the Czech Republic with a visit to machine-building and bakery enterprises.
