The oven was made in a modified version for common pastry (rolls). The adjustment consists of a double steam zone and a change of position of the first tower to 6.75 m. This ensures a perfect steaming with sufficient time in the first extended baking zone for possible "secondary" high volume rising. The penultimate zone is equipped with a duotherm with an optional intensity and a "top-bottom" ratio. Performance 15,500 pieces of rolls/hour at a grammage up to 50 g. The length of the baking area is 50.4m2 with a total length of 24 m. The baking temperature curve is set at 200-280 ° C.
