Modular unit solution of PPP type baking tunnel ovens fulfils all the requirements of skill as well as industrial bakery, pastry or confectionery production, including high capacity production factories and middle size or small bakeries. Baking ovens of PPP type are intended for baking all the types of baking products, mainly for rye and rye-wheat bread, white pastries, sponge cake biscuits, cookies, biscuits, gingerbread, pizza, rusks, sticks and confectionery pre-processed goods.

Continual PPP ovens with various types of bands from widths of 0.6 m to 4 m work continuously with all types of liquid and gas fuels and electricity with a high level of heat effectiveness and they are the basis for organising production with a low share of human labour.

All of the stated oven in the stated widths can also be equipped with respective lines for forming and proofing bread and white pastries, which guarantees savings of at least several workers in comparison with batch ovens. The standard is a high and constant level of quality of baked products with lower demand on quantity and quality of servicing personal. Our ovens are especially suitable for bakeries with a daily production of 5.000-70.000 pc of pastries and from 300-4.500 pc of bread.

A well selected oven, either single-deck or double-deck, saves labour and enables baking to take place either directly on the band, and or on a trays or in tins, including short pastry and confectionary goods. All of this offered in very high and constant quality.

The baking tunnel ovens can be configured any way you like with consideration to the required baking technology and primarily – with regard to cyclothermic ovens, the position of the tower, respectively towers.  With the proper chosen position of the tower you can reach the required temperature curves in the oven with regard to the baked products which will be baked in the given oven.

Controlling of baking tunnel ovens

Baking tunnel ovens can be controlled either by the standard control panel or by the touch screen of the control panel with PLC control system Simatic S7-300.

Standard control panel is equipped with modern safety devices, cut-outs and circuit breakers that secure reliable and safety operation. All operational states are signalled in the technology scheme for the oven. The control panel is generally fitted up with operational clock, microprocessor temperature controller for burner control and digital thermometers for the temperature measurement in individual zones of the oven. The mode of operation and control is very easy. These control panels are used with liking for self-contained ovens or for simple lines.

The control panel with PLC control system S7-300, besides own control of the oven, enables in addition set-up and archiving up to 300 recipes for baking, evaluation of defaults and its storage, secured access to the control panel with the password, continuous graph displaying of the actual temperatures and their trends, storing of the operation hours and alarms for the necessary maintenance. These control panels are mainly delivered for larger lines and they can be connected to the master control system of the bakery shop. When modem is used, these lines can be connected to internet and can be diagnosed thus from any point.

The baking tunnel ovens are usually fitted with the burners from the company Weishaupt, frequency convertors Lenze, halogen lighting with see-through windows made of strong shatter-proof glass, stainless steel side cladding and upper walkable aluminium covering.

Control and regulating components are supplied according to the customer´s wish. The oven is equipped with continuous control of the baking time, with helical bevel gearbox with frequency convertor for the drive of the oven conveyor. The basis for the cyclotherm oven is under-pressure heating system with indirect heating with the option for setting up of the temperature curve, manually or PLC controlled servo-drives for heat dampers, digital thermometers and a lot of enhancements and improvements that allow a perfect baking of the products in very low-cost operation while the quality of the products is constantly kept in such ovens.

The life-time of baking tunnel ovens PPP reaches 20 years and more with proper maintenance. Basically these ovens are very effective investment. We are capable to install our baking tunnel ovens into rather small ground plans of the buildings from the length of 10 meters and the width of 3 meters. All depends on the required production capacity, assortment and placing of the baking tunnel oven.
